Description
Acidity Regulator (E-332(ii)) is a potassium salt of citric acid in the form of white, odorless, hygroscopic crystalline powder. It is prepared commercially by fermentation of molasses with the mold Aspergillus niger. It is found in large concentrations in many citrus fruits, kiwi and strawberries. As a food additive, it has E number E332(ii) and is used to regulate acidity in foods. As it acts as a pH buffer, which contributes to its use as a preservative as well. It also acts as an emulsifier in processed dairy products like cheese.
