Aleppo pepper is also known as Halaby pepper, has a robust brick-red colour and is grown around the city of Aleppo in northwestern Syria, just south of the Turkish border. This happens to be a variety of Capsicum annul. and is the preferred capsicum for adding a hint of the Mediterranean flavour and fragrance. This is basically a pod that when ripens to a burgundy colour and is dried partially, and then de-seeded. Once de-seeded, it is coarsely ground. It derives its name from the ancient city along the silk route in northern Syria and is cultivated throughout Syria and Turkey. It has a very similar flavour to that of the ancho chile, and has a hint of cumin and has a fragrance that draws resemblance to sundried tomatoes. Aleppo pepper is moderately spicy in flavour.
