Look for Almond paste in the baking ingredients section of the grocery store. It is available in plastic wrappings and cans. Make sure the packaging is properly sealed as it may dry out when exposed to air. Check for its expiration date on the packaging to make sure it is fresh and has not expired. To make Almond paste at home, go for the fresh almonds and quality ingredients, and make sure almonds are not rancid or shriveled.

Description
Almond Paste is a thick, creamy paste prepared from ground almonds and sugar in equal quantities. Beaten eggs, cooking oil and heavy cream are also added in small quantities to improve flavour and consistency. All the ingredients are blended together in a food processor. It is warm beige in color and is quite similar to marzipan but is slightly coarser than it. It has a smooth and soft texture when prepared but is sold in solid, block or cylinder form. It is firm but pliable and is a versatile ingredient for desserts and sweet preparations.
