Choose artichoke heart with tightly formed fresh leaves. Avoid hard artichoke hearts as they may be old or over-mature.

Description
Artichoke heart is the tender fleshy centre of immature artichoke flower head. It is the inside portion which is left when the leaves are taken off and the choke is also discarded. Artichoke heart of the flower is edible.
