Blue corn is a corn that has bluish kernels. Blue corn cobs have pale green to white colored husks that when peeled back reveal dark blue kernels.It has anthocyanins that give it its blue color. It is a variety of flint maize grown in Mexico and the Southwestern United States. Originally, Blue corn was developed by Hopi and remains as a vital part of Hopi dishes such as piki bread. It is widely used in Peruvian cuisine.
