Description

Bread Improver is a combination of ingredients(acids and enzymes), mixed together in an appropriate formula that activates the gluten and helps produce gas. The gas assists and improves the processes of dough kneading and fermentation. Bread improvers improve the stability of dough during the production process. They can improve the heating expansion of the dough, mainly in the volume of the bread. They can also keep the soft property of the finished product for a long time, delaying the retrogradation of starch.
