Description
Burdock is a genus of biennial plants in the family Asteraceae, in the genus of Arctium, native to northern Asia and Europe. Burdock root is a long, slender underground tuber of the plant, considered as a vegetable. It grows to a size measuring about 2-3 feet in length and similar in shape as that of carrot or parsnip. The deep roots are either brown or nearly black on the outside.
