Description
Buttermilk is a white liquid resulting from butter manufacturing, composed of water, lactose, proteins and minerals. Buttermilk powder is obtained by removing water from liquid buttermilk (sweet or acidified buttermilk). Buttermilk is pasteurized, concentrated with an evaporator and finally dried through spray drying or roller drying(dried to produce powder). It should contain less than 5 percent moisture and more than 4.5 percent milk fat based on weight, to be considered as powdered buttermilk or dried buttermilk as whole. Spray dried form of buttermilk is also called as butter milk solids or BMS.It is highly soluble in water, along with its emulsifying properties. It can be used the same way as liquid buttermilk as it will impart the same flavour even after dehydration.
