Dehydrated powders are usually made from fruits and vegetables. To make dehydrated powders, fruits and vegetables are sundried to avoid nutrition and active content losses. The extraction process of the soluble solids is carried out in a counter-current extraction system. The slurry is then passed through decanters to separate the juice from the residue. The juice is then passed through clarification to remove impurities. The juice is then concentrated using an evaporator. The concentrated juice is then spray dried. While powders are high in demand, the problem is that most of them exist with bland flavors and washed out colors. This is caused by poor extraction, processing, and storage.
