Choose properly dried tomatoes and check its expiry date. Homemade dried tomatoes should be placed in an airtight bag or container and stored in the refrigerator or freezer for six to nine months for optimum shelf life. Make sure there is no moisture on them before they’re frozen to avoid freezer burn

Description
Dried tomatoes are ripe tomatoes that lose most of their water content after undergoing drying treatments. Usually sun dried, these tomatoes are pre-treated with sulfur dioxide or salt before being placed in the sun in order to improve colour and appearance. They have darker color than fresh tomatoes. It typically takes 4–10 days to complete the entire sun drying process. Sun-drying is economical, but the process can be tricky because they need a specific temperature range.
