Cocoa Powder comes from cocoa beans that grow in pods on the cacao tree. Dutch-processed cocoa powder is cocoa powder that has been washed in a potassium solution that neutralizes its acidity. The Dutching process also gives the cocoa powder a darker color. It forms the basis for much of modern chocolate, and is used in ice cream, hot chocolate, and baking. Dutch-processed cocoa powder in baking is usually paired with baking powder. Dutch process cocoa has a smoother, more mellow flavor that's often associated with earthy, woodsy notes.
