Description

Emulsifiers & Stabilizers (INS481(i)) is a combination of stearic acid and lactic acid resulting in sodium stearoyl lactylate, used as a food additive. It is in the form of cream-colored powder or brittle solid. It is an FDA approved food additive used in the form of emulsifier (mix two or more liquids that are normally immiscible) and stabilizer (prevents the breakdown of emulsions in food) in processed foods. It can help to strengthen dough, mixes liquids and oils together.
