Description
Fresh pigeon pea is a perennial legume within the family Fabaceae and is widely cultivated in all tropical and semitropical regions. It develops in medium-sized pea pods, with four to five developed seeds in each pod. The color of the pod ranges from bright green when young, maturing to display brown splotching to completely dark brown. The peas inside the pods are bright green when young and mature to a light golden yellow. It is a popular vegetable and widely used in salads, curries, vegetables and rice preparations. it has a peak season during the late summer and fall months.
