Description
Glycerol monostearate is a commonly used emulsifier in foods. It is a a white colored, odorless, and sweet-tasting flaky powder. It occurs naturally in the body as a by-product of the breakdown of fats, and is also found in fatty foods. GMS is produced either through heating oils/fats with excess glycerol or by direct esterification of glycerol (of animal or plant sources) with stearic acid. Glycerol monostearate is largely used in baking preparations to add "body" to the food. It is responsible for giving ice cream and whipped cream its smooth texture. It is sometimes used as an anti-staling agent in bread. Glyceryl monostearate is a generally recognized as safe (GRAS) ingredient when used in food with no limitation other than current good manufacturing practices.
