Usage Tips

  1. High maltose corn syrup can be used as a replacement to normal glucose syrup.
  2. For its balanced fermentability, it can also be used in brewing.
  3. It can also be used as a preservative in food products to inhibit fermentation and bacterial growth.
  4. Hard candies produced with high-maltose syrup will not become sticky as easily as when they are produced with glucose syrup.
  5. It can be used in hard candies, processed sweet foods and frozen desserts.

Description

High Maltose Corn Syrup is a thick, viscous, odorless, colorless syrup, made from corn starch that contains maltose and glucose. It has a very low content of sugar(the majority sugar is maltose) and high content of maltose. It contains little to no fructose and is less sweet than high-fructose corn syrup. The syrup must contain at least 50% maltose, to be given the label "high". It is considered as a food additive used in the form of sweetener and preservative.

Selection Guide

When buying high maltose corn syrup, read the labels carefully. Make sure it contains at least 50% maltose or some may have as high as 70% in them.

Note

High maltose corn syrup will affect the body as other sugars do. Excessive intake might lead to cavities, insulin resistance, weight gain, fatty liver and heart diseases. Regular consumption of beverages sweetened with high maltose corn syrup increases the risk of heart disease factors like bad cholesterol, more than glucose. (1)
