The skin of hilsa fish should not be dull nor patchy. It should be firm. Avoid if the fish smells foul.

Hilsa is a herring-like fish that is found in rivers and coastal waters around South Asia and parts of the Middle East.It has fusiform body, which is deep and laterally compressed. . Body of hilsa fish is generally covered with big sized scales. Their body is bright silver in color, with slightly green backside. They have straight or little bit curved gill rakers, and have no teeth on the jaws. Hilsa is highly valued in Bangladesh, India and some other South Asian countries. It is a type of oily fish which is common in Bengali and Oriya cuisines.
