Go for dark colored jaggery to make jaggery syrup. Prefer aged jaggery if available as the chemical residue is less in them. For packed jaggery syrup, check for its "use-by" date.

Jaggery syrup is a dark brown colored syrup prepared by boiling crushed or grated jaggery in water . It has thick and sticky texture. It is a little thicker than honey.
