Look for uniformly ripe jamun to extract pulp. When buying in packaged form, check for their "use-by" date on the packaging.

Description
Jamun is a fruit of evergreen tropical tree in the flowering plant family Myrtaceae. It turns from pink to crimson red, and then finally to black as it matures, with a shiny skin. Jamun Pulp is extracted from peeled, deseeded jamun. The purple flesh of jamun is blended to a thick pulp, in a mixer or food processor. It can be used to flavour drinks and desserts.
