Description
The zest of a lime is basically the outer green layer of peel, which contains fragrant and flavorful oils. Zest can be extracted from the lime by using a scraper which ensures that the white pith of the lime fruit is not peeled along with it as the white pith has an unpleasant bitter taste which can spoil the taste of the food. It has long been used in Thai curry and Sri Lankan cuisine.
