Description
Milk protein concentrate (MPC) refers to a type of concentrated milk product that contains 40–90% milk protein. It contains micellar casein, whey proteins, and bioactive proteins in the same ratio that is found in milk. To make milk protein concentrate, whole milk is first separated into fresh cream and skimmed milk. Skim milk then undergoes ultrafilteration to make a lactose-reduced skim concentrate. This process separates milk components according to their molecular size. Milk then made to pass through a membrane thata llows only small size particles like some molecules of lactose, minerals, and water to pass through it while large size molecules like casein and whey proteins are unable to pass through it. The proteins, lactose, and minerals that do not go through the membrane are then spray dried. With furthur, spray drying and evaporation the remianing materials concentrate to form a powder.
