  1. Beef mortadella

Description

Mortadella is a traditional, large Italian sausage, a product of Bologna, Italy and produced only in central and northern Italy. It is prepared of finely hashed or ground heat-cured pork, that contains at least 15% small cubes of pork fat. The sausage is flavoured with spices that include black pepper, myrtle berries, and pistachios. It available in the cooked form in the market, and is unsmoked and unfermented. It is pinkish in color and has a very smooth texture with lumps of fat. It is prepared in four different sizes, small (.5 to 1 kg), standard (10 to 15 kg), large (30 to 100 kg) and giant (100 kg and up). It is used as a charcuterie meat (smoked, cured or cooked meat). It can be served in sandwiches and salads.

Mortadella is available in different forms, a whole one, sliced in a tray, in cubes or pieces or vacuumed. Choose according to the requirement and check for the packaging and "use-by" date to confirm its freshness.
