The flavor is distinctly lemony and tangy, with distinct lime zest notes and a pleasantly lingering, slightly numbing camphor aftertaste.

Usage Tips

  1. The leaf is often used as dried flakes, or in the form of an encapsulated flavour essence.
  2. It has a range of uses, such as flavouring in pasta, breads, cookies, in baked fish; infused in vegetable oils; and made into tea, including tea blends.
  3. It can also be used as a lemon flavour replacement in milk-based foods, such as cheesecake, lemon flavoured ice-cream and sorbet without the curdling problem associated with lemon fruit acidity.

Description

Backhousia citriodora also known as lemon myrtle is a flowering plant in the family of myrtaceae. This plant is endemic to subtropical rainforests of central and south-eastern queensland, Australia. Lemon myrtle grows to almost 8m with fragrant, glossy and lance shaped leaves of 2-5 inches. The small cream colored flowers gorws in cluster during summer season.
