Description
Polyglycerol esters are a combination of polyglycerol and natural fats(mainly from plant origin). It is produced by polymerization of glycerol followed by esterification with fatty acids (in the presence of an alkaline catalyst). It is in the form of light yellow to amber, oily to very viscous liquid or hard waxy solid. It is a kind of hydrophilic food emulsifier that produces strong emulsification effect for oils and fats.
