Description

Preservative (INS 250) is a food additive commonly used in the meat industry. When it is added to meat, it gives a rich red color which makes the meat very appealing in appearance. It also protects the meat from oxidation which causes rancidity and bad odour and prevents the development of harmful bacteria, Clostridium botulinum that causes botulism, a food infection leading to nervous system damage. It exists as a white crystalline powder which is slightly yellowish in colour.

Note

Preservative (INS 250) is quite harmful as may lead to Acute methemoglobinemia (condition where haemoglobin loses its ability to carry oxygen) with symptoms like lack of energy, difficulty in breathing, headache, dizziness, vomiting, diarrhoea and sometimes a blue or pale purple colouration in areas near the eyes, mouth, lips, hands and feet (blue baby syndrome).(1)
