Description

Raising Agents (INS 500) are colourless or white crystals.They maybe granular or crystalline powder.They are obtained from seawater or salt and are basically sodium salts of carbonic acid. It is also synthesised from sodium chloride and limestone by the Solvay process or by electrolysis of sea water. It is a food additive that is used in varying capacities such as, an acidity regulator (regulates the acidity or alkalinity of a food), anticaking agent(helps prevent food particles from sticking together), raising agent ( increases dough volume by producing gas), and stabilizer( maintains the uniform dispersal of substances in a food).Raising Agents (INS 500) are used in the production of baking soda and washing soda.Baking soda is a pure white powder with fine granules that are not clearly visible and they get easily dissolved in water whereas washing soda is a whitish powder with large granules that are quite visible and dissolve slowly in water.Baking soda is used in food like pancakes, doughnuts, cakes, idli, dosa and dhokla.When baking soda is heated to a high temperature, it breaks down to form washing soda and releases steam and carbon dioxide.
