Description

Red chili pickle is the pickle that is made using bright red colored chillies. Summers is usually the time when people prefer making various pickles, preserves and papads. Red chili pickle is one of the most commonly eaten pickle in various Indian households. Not just easy to make, it has amazing mix of flavors that go well with almost any basic Indian recipe. To make red chili pickle at home, rinse 12 to 14 fresh red chilies with water, wipe it dry. It is importnat that the chilies are completely dry before stuffing them with the pickle masala. Remove the crowns from the red chillies and make a slit on the surface of each chili (only one side).Using the back handle of a spoon scrape off the seeds and pith from each red chilli and keep them aside. Now make the masala filling. Take 4 tablespoons mustard seeds, 6 tablespoons fennel seeds and 3 tablespoons fenugreek seeds in a small grinder jar and powder it coarsely. Also add 5 tablespoons dry mango powder (amchur powder), 2 tablespoons turmeric powder, ¼ teaspoon asafoetida (hing) and 3 tablespoons salt. Mix it well and add 4 to 5 tablespoons mustard oil in the coarsely ground pickle masala. Now mix the contents ell and use it to fill the split chillies. Place each stuffed red chilli in a clean glass jar, pour 1 cup mustard oil and close the jar with a lid. After few hours remove the lid and cover the jar with muslin cloth. Leave it under the sun fro next few days.

Selection Guide

The pickle jar needs to be placed out in the sun during the day and brought inside before sundown, regularly for days together. It needs to be handled with super-dry, ultra-clean equipment.
