Description

Red yeast rice is a type of fermented rice that is produced by a type of red yeast (Monascus purpureus). The completely cultured red yeast rice is then either sold as the dried grain, or it is cooked and pasteurized to be sold as a wet paste, or dried and converted into powder form to be sold as a fine powder. It is purplish-red in color. Red yeast rice has been used in China both as a food and medicine.
