Sharkara is a unique ayurvedic sugar, specially produced in India by a complex process in small factories under the supervision of Vaidyas.Though sugar can be made from dates, honey, turnips, grapes and other fruits but Sharkara®, made from sugarcane, has very special qualities and is the most highly regarded by ayurveda. Usually this sugar is sold as whole crystals only but to guarantee easy handling in households it is sold as granulated form of Sharkara sugar also. In Ayurveda, Sharkara is the most highly regarded of all types of sugar. It is produced from sugar cane and is also known as "Ayurvedic candy sugar". During the production of Sharkara the sugarcane is initially cooked, at which time impurities and acid-forming ingredients are slowly separated and removed.
