Description
Raw mangoes are the mangoes that are picked when just mature. These mangoes aren’t fully developed, so the seed is small and thin and the firm flesh is crisp. The flavor is sharply sour and can be slightly bitter due to concentrations of oxalic, citric and other types of acids which aren’t present in a ripe mango. The raw mango is generally green in colour, though the ripe variety is available in a number of colours including yellow, orange, red or purple. The centre of the fruit has a single seed, which is oblong and flat.
