If buying readymade sprouted green gram, look for plump, crisp sprouts that are not slimy, limp or stringy. To avoid bitter taste, use organic green gram.

Sprouted green gram is obtained by a natural process in which seeds germinate and put out shoots. Process involves overnight soaking of beans and then draining the remaining water from the soaked beans. Once soaked, there are two methods of sprouting. First, the soaked mung beans can be transferred to a clean cotton or muslin cloth and tied a cloth. It is then kept in a container and covered with a cloth or messed plate. Second, soaked mung beans can be transferred to a box, glass jar or container and covered with a cloth or a mess. They are then left undisturbed in a warm, dark place until they sprout. They may sprout within hours or take as much as a day or two, it depends upon the temperature. Sprouted Green Gram is a great addition to salads. Sprouting enriches the nutrition and makes it easily digestible.
