Masala chai is a flavoured tea beverage made by brewing black tea with a mixture of aromatic Indian spices and herbs. Although traditionally prepared as a decoction of green cardamom pods, cinnamon sticks, ground cloves, ground ginger, and black peppercorn together with black tea leaves, retail versions include tea bags for infusion, instant powdered mixtures, and concentrates. Masala tea is a very popular beverage in the Indian subcontinent (India, Pakistan, Bangladesh, Nepal and Sri Lanka). Though the ingredients may vary from region to region, "tea masala" typically consists of crushed ginger, crushed cardamom, peppercorns, cloves, and cinnamon. The simplest traditional method of preparing masala chai is through decoction, by actively simmering or boiling a mixture of milk and water with loose-leaf tea, sweeteners, and whole spices. Indian markets all over the world sell various brands of chai masala for this purpose. The best thing about this tea masala recipe is that it can be made at home with minimal costs. To make this masala at home, take dry ginger,crush it well and remove the fiber part. Except dry ginger powder take all the ingredients ie; cloves, fennel seeds, cinnamon sticks, pepper corns, grated nutmeg and cardamom in a pan and dry roast until nice aroma comes. Now mix all the ingredients together and store it in an air tight jar.
