Description
Tomato flavor is a balance of acid and sugars present in it. The sugars in the tomato include fructose and glucose which lead to a sweet flavor while the acids mainly citric and malic acids result in a tart, sometimes sour flavor. Volatile compounds in the fruit are released as a fragrance when the fruit is crushed during eating and also contribute to its flavor. The concentration of blend of acids and sugar determines the taste of tomato flavor. A tomato high in sugars and low in acids has a sweet taste. A tomato low in sugars and acids has a bland taste.
