Description
Vegetable stock is a flavoured liquid preparation made by simmering vegetables in water. The vegetables may include onion, celery, scallions, garlic, parsley, mushrooms, eggplant, bell peppers, carrots, thyme and bay leaves. The vegetables are boiled in a large saucepan, with a pinch of salt. It is reduced to a simmer and cooked for almost 2 hours. It is then sieved and can be used in any recipes like risotto, soups or gravies. For vegetarians, vegetable stock is a good substitute for chicken stock.
