Xylanase is a class of enzymes produced by some microorganisms. It degrade the linear polysaccharide xylan into xylose, breaking down hemicellulose(one of the major components of plant cell wall). Humans are not capable of producing this digestive enzyme despite eating some plant-based foods that contain this type of fiber. It can be used for bread making and the production of corn starch.
