Description
Acetate is a type of anion, salt, or ester formed by the combination of acetic acid with a base (alkaline, earthy, metallic or nonmetallic or any other). It is the conjugate base of acetic acid. Acetic acid converts to acetate, above a pH of 5.5 . Acetate salts are usually colourless and highly soluble in water. Common acetate salts include sodium acetate, aluminium acetate and potassium acetate. Acetate is also available in clear, transparent flexible sheets or rolls used for home baking and candy making, in place of parchment paper. It can be used to create thin bands of chocolate to surround cakes. It can be formed into cylinders to mold desserts like layers of mousses and cake. It can also be used for forming slabs of almond bark, or for placing dipped truffles upon.
