Description
Acidity Regulator(INS 501 (ii)) is a white, crystalline substance. It is manufactured by passing carbon dioxide through a potassium carbonate solution. It is widely used to regulate the pH of food products. It is also used as a leavening agent by producing carbon dioxide to raise the baked product. It is also used as a low-sodium substitute for baking soda (sodium bicarbonate). Acidity Regulator(INS 501 (ii)) was first produced by Nathan Read, in Massachusetts, in the year 1788, by bubbling carbon dioxide through potassium carbonate solution.
