Description

Alkalized cocoa powder is cocoa powder washed with a potassium carbonate solution(an alkalizing agent to modify its color and taste) that neutralizes cocoa's acidity to a pH of 7. As it isn't acidic, it doesn't react with alkaline leaveners like baking soda to produce carbon dioxide. Recipes using alkalized cocoa powder are usually leavened by baking powder, which has a neutral pH. This Cocoa alkalization was developed by Van Houten in the 19th century in Holland. Alkalized cocoa powder is dark red in color and may have different darkness depending on the level of alkalization. It is being used in the production of oreo cookies. It produces more moist and darker baked goods than natural cocoa powder.
