Description

Anticaking Agent (INS 170(i)) also known as Calcium carbonate is a very common food additive. It is naturally found in rocks, in the shells of marine organisms, snails, in pearls and eggshells. It is abundantly present in agricultural limestone. It exists as a white solid, in crystal or powder form, with a chalky texture prepared either by grinding natural limestone or synthetically, through precipitation. It tends to react with strong acids, releasing carbon dioxide. It also releases carbon dioxide on heating. Anticaking Agent (INS 170(i)) has some important roles when added to food like preventing lump formation in food, regulating acidity, adding white colour to foods, being a source of calcium, acting as nutrient for yeasts and as a firming agent for vegetables.

Note

Anticaking Agent (INS 170(i)) can be highly risky in concentrated solid form or in concentrated solution form. Direct eye or skin contact with pure crystals or powder can result in irritation. On breathing the powder or crystals can irritate the respiratory tract.(1) Excess intake of Anticaking Agent (INS 170(i)) can cause too much calcium absorption in the body causing hypercalcemia(excess calcium in the blood), vomiting, abdominal pain and altered mental state, sometimes it may cause milk-alkali syndrome, which can cause serious toxicity leading to fatality.(2)
