Description

Bread flour is a flour from which bread dough with a good quality of gluten can be made. It is a high-protein flour which is specifically milled for yeasted breads. The high protein content means that it has more gluten in it, which makes the dough more elastic and light and it results in a chewy and airy texture when baked. It is typically used to make breads.
