Taste Profile

Dark rums are produced in charred oak barrels so they are usually heavy in flavor.

Usage Tips

  1. Dark rums commonly provide substance in rum drinks, as well as colour.
  2. Rum is sometimes mixed into ice cream, often with raisins, and in baking it is occasionally used in Joe Froggers, a type of cookie from New England.
  3. It is commonly used to macerate fruit used in fruitcakes and is also used in marinades for some Caribbean dishes.

Description

Rum is a liquor made by fermenting then distilling sugarcane molasses or sugarcane juice. Rums are produced in various grades. Light rums are commonly used in cocktails, whereas "golden" and "dark" rums were typically consumed straight or neat. Dark rums, also known by their particular colour, such as brown, black, or red rums, are classes a grade darker than gold rums. They are usually made from caramelized sugar or molasses. They are generally aged longer, in heavily charred barrels, giving them much stronger flavors than either light or gold rums, and hints of spices can be detected, along with a strong molasses or caramel overtone. Most dark rums come from areas such as Jamaica, Bahamas, Haiti, and Martinique.

Selection Guide

Look for age statements and regions before buying the rum. Look for bottles that carry verbiage that has legal weight and meaning, such as ‘aged 10 years’.
