Look for the "use-by" date on the packaging of dried Pomelo. Make sure it has no evidence of moisture in them.

Description
Pomelo is a citrus fruit from the family Rutaceae, similar in appearance to a large grapefruit. Dried pomelo is the dehydrated form of ripe, green pomelo fruit. It can be sliced, put into a food dehydrator or microwave. It is widely used in authentic dishes of Southeast Asia and Malaysia.
