  1. Emulsifier (E472a) can be used to improve the aeration properties of high fat recipes.
  2. It can be used as a coating for fruits, nuts and meat products to improve their appearance and extend their shelf life.
  3. It can be added to breads, dessert toppings and cheesecake and mousse mixes as well.

Description

Emulsifier (E472a) is obtained with a mixture of esters of glycerol with edible fats and acetic acid. It can be liquid to solid in consistency and white to pale yellow in color.

Selection Guide

Look for the "best-before" date on the label of Emulsifier (E472a). Also check for "Suitable for Vegetarians" on the label of its packaging as it can be of animal origin.
