Flavour Enhancer INS 270 is commonly known as lactic acid. It is a food additive which is usually obtained commercially by heating and fermenting carbohydrates such as sucrose, molasses, starch, or whey. It was first isolated in 1780 by a Swedish chemist, Carl Wilhelm Scheele. Lactic acid is the commonest acidic constituent of fermented milk products such as sour milk, cheese, and buttermilk. Flavour Enhancer INS 270 is a colourless, syrupy liquid or white to light yellow solid or powder. It is mainly used as an acidifier, flavouring agent and pH regulator in food and beverages. As an acidifier, it is used in meat, salad, dressings, pickled vegetables, candies and beverages to give a sour taste and act as a preservative. As a flavouring agent, it is used in preparations like sour beer or sourdough bread to give them typical sour taste. Finally, as a pH regulator, it is added to foods like jams, jellies and marmalades inorder to maintain the acid-alkaline balance and hence increase their shelf-life.
