Usage Tips

  1. French leeks can be great for salads, they can be easily sautéed with olive oil or butter and added to gratins.
  2. They can also be blanched, then grilled to impart smokiness.
  3. They go well with cream sauces such as béchamel, with various cheese, especially goat, cheddar and aged sheep's cheese.
  4. They release an aroma that can be absorbed by other things in refrigerator, so to store them before cooking, lightly wrap them in plastic wrap to maintain the odour and moisture.
  5. Do not trim or wash them before storing.
  6. Store French leeks in the vegetable drawer of the refrigerator.

Description

French Leek differentiate themselves from common leeks in both appearance and flavor. They are sleek with more snowy white flesh versus green throughout its shank, which is advantageous as the green leaves can be fibrous and less edibly raw. Young French leeks can be about a foot in length while fully grown leeks can reach up to two feet while still maintaining their slim figure. They are available in the fall. They are grown in France and used in French cuisine.

French Leeks stalks should be crisp and firm. Avoid those stalks that are withered or have yellowed tops.
