Description

Invert sugar is a mixture of dextrose and fructose produced from sugar (sucrose) by application of heat and an acid such as cream of tartar or citric acid.It affects the sweetness, solubility and amount of crystallization in candymaking. It is also known as artificial honey.

Note

Invert sugar can cause weight gain, diabetes or cardiovascular diseases.(1)
