Description
Milk fat is the natural fat of milk which can be obtained from cow , buffalo etc from which the butter is made. It mainly consists of the glycerides of stearic, oleic and palmitic acids. It is the fatty portion of the milk and milk is often sold according to the amount of milk fat it contains. Milk contains approximately 3.4% total fat. It is often used in ice creams and other food products to increase their richness of flavour and add a characteristic smooth texture.
