Potassium sorbate is a food additive which is the potassium salt of sorbic acid. It is mainly used as a food preservative since its acidic nature is effective in inhibiting moulds and yeast growth in food. It exists as a white to yellow crystalline powder. Potassium sorbate was discovered by Frenchmen around 1850. They obtained it from berries of the European Mountain-ash tree (Sorbus aucuparia ), after which the acid is named. It grew first in South and East Asia but now grows in lots of parts of the world.
