Description
Potato Flakes are flat chunks of dehydrated mashed potato. A thin layer of mashed potatoes are heated at low temperature (around 150 to 200 F) until the potatoes are dehydrated. These dried out potato sheets are then broken up into small flakes. They can be used in yeast breads that call for mashed potatoes or used as an excellent base for creamy potato soup. They can be used as a coating in fritters, chicken or fish.
