Description

Resistant maize starch is the starch derived from the corn grain, resistant to digestion. It is a type of starch that escapes from digestion in the small intestine of healthy individuals, hence the term resistant starch. It functions similarly to soluble, fermentable fiber that helps feed the friendly bacteria in the gut and increases the production of short-chain fatty acids like butyrate. Hi-maize flour is considered to be a highly concentrated source of resistant starch.
