Description
Soy Concentrate is a protein isolated from soybean. It is prepared by removing a portion of the carbohydrates (sugars) from dehulled and defatted soybeans. It retains most of the fiber of the original soybean. It can be done through two methods, alcohol extraction(results in most loss of the soy isoflavones) and water extraction(good retention of the isoflavones). It can be used as a functional or nutritional ingredient in a wide variety of food products.
